Date and Oat choc-chip Cookies

Gluten-free, refined sugar-free, healthy and delicious!



These cookies are really delicious yet healthy!



Date and Oat choc-chip Cookies


Ingredients- try and source as many organic products as you can


Add to a food processor:

  • 125g soft butter- ideally organic and grass-fed

  • 1 tsp vanilla extract

  • 1/2 cup of coconut blossom sugar

  • 1/2 cup of medjool dates

  • 1 egg- ideally organic and free-range

  • 1 cup ground almonds

  • 1 cup GF plain flour- I use Dove Farm

  • 1/2 cup of hemp hearts

  • 1 tsp bicarbonate of soda

Blend until smooth then tip into a bowl and add:

  • 1/2 cup GF oats- add extra if mix is very wet

  • 1/2 cup of pecans or walnuts- chopped

  • 1/2 cup of dark chocolate chips

  1. Mix ingredients together and put onto a piece of baking paper and roll up into a large sausage. Put in the fridge or freezer for around 20 minutes.

  2. Preheat oven to 180 C. Prepare a couple of metal trays with baking paper.

  3. Take out the sausage from the fridge/ freezer and cut into rounds.

  4. Place the rounds onto a baking paper covered metal tray, spaced apart.

  5. Bake for 15 minutes, take out cookies and let cool on a metal tray

  6. Can be eaten straight away of frozen.
