Dairy-Free Protein Packed 3 Seed Pesto

This recipe is dairy free, but you can easily add in some good quality parmesan if you wish.

Protein packed with 3 different seeds, experiment with other seeds if you want!


I'm avoiding dairy (and some other things) at the moment because I'm about to do a cleanse, so thought I'd make a batch of this delicious pesto, it goes with so many things and adds protein to meals~ stabilising your blood sugar and keeping you fuller for longer.


Dairy-Free Protein Packed 3 Seed Pesto


Ingredients


  • 3 x packs of basil

  • 2 x cloves of garlic (or more or less depending on your preference!)

  • 3 x tbsp hulled hemp seeds

  • 2 x tbsp pumpkin seeds

  • 2 x tbsp sunflower seeds

  • 1 tsp light miso

  • 2 x tbsp nutritional yeast

  • lemon juice

  • Extra virgin olive oil (to you desired consistency)

  • salt




Method

I use a mini chopper for this recipe, but you could use any food processor.

  1. Crush garlic, ideally an hour before using, this enhances the active ingredient allicin.

  2. Add everything to the mini chopper and pulse until you reach the desired consistency.

  3. Using the miso gives an umami flavour and the nutritional yeast is nutty/cheesy. I have used these because I'm avoiding dairy, feel free to add in a good quality parmesan if you want

  4. Season to your taste.
